Magic Dust

I’m going to start with this one, because it’s a staple in nearly all of my cooking. It’s a seasoning I keep in a shaker on the stove, and I add it to omelettes, mashed potatoes, nachos, soups, basically anything you want to add a little zest to. Just a little brings out the flavors of whatever you’re cooking. A little more really spices things up.

This is one that comes straight from a cookbook, which is Peace, Love, and Barbecue by Mike Mills and Amy Mills Tunnicliffe. It’s a fantastic book, and you can find this recipe on page 67:

Mix in a big bowl:

1/2 cup paprika

1/4 cup kosher salt, finely ground

1/4 cup sugar

2 Tablespoons mustard powder

1/4 cup chili powder

1/4 cup ground cumin

2 Tablespoons ground black pepper

1/4 cup granulated garlic

2 Tablespoons cayenne

Keep the bulk of it in a sealed container indefinitely, but have some handy in a shaker. This is our go-to spice in Chez Knucklehead.
